TWD: Thumbprints For Us Big Guys
I've got to give a big old pat on the back and thank you to Mike of Ugly Food Dude. He selected Thumbprints For Us Big Guys for this week's Tuesday's with Dorie recipe. (I can't wait to see if he picked the recipe because it has the word "guys" in it. You know... because he's a guy.)
I seriously fell in love with these cookies. I could have eaten every single one myself, in one sitting. Good thing I only made 1/2 batch. And good thing my neighbors don't mind me off-loading baked goods to them. And good thing I've been working my [bleep] off in the gym lately so I have just a teeny, tiny, itty-bitty shred of willpower these days. (I know, it doesn't make sense to bake every week and then have to kill yourself in the gym. No sense. At all.)
These shortbread-type cookies were supposed to be made with hazelnuts. But seeing how my bag of hazelnuts was, oh, a year past it's expiration, I went with almonds. Fine with me, I love almondy baked goods. And, since it was almonds, I HAD to go with cherry jam.
Sigh, these were so good. I miss them already. Wonder if the neighbors have any left...

These look soooo good! I haven't made these since I was baking up a storm of cupcakes, but after seeing your picture I might just have to bake them tomorrow....

I almost went with pecans, but since I had hazelnuts, I did it with them...and strawberry jam.
Oh, glad you enjoyed these! They look delicious. I used almonds as well and thought they worked perfectly, especially with the almond extract (always a favorite flavor of mine). I think work out hard, bake hard is a good mantra for living . .
I'm drooling just thinking about the combo of almond+cherry. I might have to try that next time!

Ok, THAT cracked me up when you mentioned seeing if the neighbors had any left. Yes, these were that good to me also and I'm glad I only made half a batch, too! Cherry sounds great!
Cherry jam sounds fantastic! I used almonds as well, but with lemon curd. I gave all mine away too, but they're across town--good thing!

Your cookies look delicious and I like the sound of using almonds rather than hazelnuts. I haven't made these yet (had to work both jobs today) but may have to fit them in somewhere. :)
A workout is a fine price to pay if it means I get to eat things like these cookies! Yours look great and I bet that cherry jam was fantastic with them.

It does make sense to bake and work your a** off in the gym because you love it and are passionate about it! But you already knew that! Very pretty cookies.
They look great! I didn't get a chance to make them, but I've seen many positive reviews. I don't think I'd feel like I need to run nearly as much as I do if I didn't bake constantly; they're both fun activities, though.

These look perfect, and cherry jam would be such a hit here...everyone loves cherries, why didn't I think of it??? Next time, for there will be a next time. Guys here were viewing these as one bite wonders and popping them in their mouths like popcorn kernels. They were gone in no time. Yours probably would have been gone in less time than that as they look so perfect and they are filled with cherry jam!
