TWD: Milk Chocolate Mini Bundt Cakes


Seems like we got in spurts at Tuesday's with Dorie. Like right now, we're smack dab in the middle of a full-on chocolate phase. This week, Kristin of I’m Right About Everything picked Milk Chocolate Mini Bundt Cakes.

Although I'm slightly burned-out on cake, I still thought these were really good. They were light and moist and the sweet, nutty swirl really added a lot of interest. Of course, I forgot to add my swirl mid-way through the batter, so mine was more of a crunchy bottom.


But no matter, they were still really tasty.

I skipped the glaze since so many TWD baker reported having problems with it. Thanks to Mr. Hines (first name, Duncan) I was able to save myself some grief and use some warmed ready-made chocolate icing instead. I also "thirded" the recipe and made just two minis.


OK, that's that! There's more chocolate on the horizon... watch out for some dad-gum yummy sounding brownies next week. For now, it seems you actually won't find the recipe on Kristin's site, but I did find it ---> HERE, or pick up a copy of Dorie Greenspan's book "Baking, From My Home to Yours".

  1. They look nice in the mini bundt pans! I didn't have those, and I skipped the swirl too. The one I had was pretty good, though!

  6. I adore the way the chocolate sauce slid down the mini bundts and started puddling in little dots around the base of the cakelets. Adorable.

    your desserts look great, jacque, even if you do claim to be caked-out. i think a crunchy bottom sounds great! on a cake, of course, not in general... :)

  17. Your mini bundts look soooo tasty, I want to lick that frostin right of them!

    The cake decorating class was fun, we had 2 teachers and 6 participants (8 was the max.), so everyone got enough one-on-one time!

  18. Those are really nice looking little cakes you have there. I'm so glad you liked them. I was surprised by their nice flavor and moistness. I liked them too. Being a dark chocolate fan, it kinda took me back.
    Great photos too. BTW you're right, it is amusing the idea of feeding my gym rat friends. They do splurge on occasion. hehe I'll have to keep an eye out for a new pan, I guess.

  20. Wow. those look really moist! Mine were not dry, but rather crumbly - maybe due to the swirl. These look great! so cute as mini's - nicely done!
