TWD: White Chocolate Brownies


This week for Tuesday's with Dorie, Marthe of Culinary Delights selected White Chocolate Brownies.

I think everyone went into this with high hopes... the picture of these brownies is one of the more appealing ones in the book. A white chocolate brownie is studded with raspberries and topped with golden meringue. YUM!


Unfortunately, the question and answer forum (on the TWD site) for this recipe was filled with cries of woe as reports of undercooked brownies became the norm. Apparently, it was difficult to test the done-ness of the brownies with the meringue layer on top.

I opted to bake the brownies "naked" until done and then top them with meringue, finally finishing them off with just a minute (actually less) under the broiler. Worked great!

How did they taste? Interestingly, I thought the orange zest in the recipe was the predominant flavor, with a burst of raspberry every now and then. (OK, I just figured out that I mistakenly added probably double the orange zest required... duh! No wonder!) Altogether they were quite tasty, once I got used to the orange flavor (I guess I was expecting more, well, white chocolate flavor, which I couldn't really detect).

P.S. Oh, I forgot to add that I baked 1/4 of the recipe in a 6" springform pan.

I made these a little bit over a year ago and while my husband and I enjoyed them the kids kept asking when I was making "normal" brownies again since none of them cared for this recipe. I do have to say though that they sure look pretty!

Now THAT'S a topping! Beautiful! I agree -the taste was so different - it was hard to form an opinion. Nothing that I would make again, but great fun to bake and experiment with!

Your meringue looks amazing! Definitely the way to do it cooking it after. I didn't have any oranges so left that flavour out. I'm laughing that you accidentally doubled yours!

Wow, that looks so good!!! For my second attempt I listened to your suggestion and baked the brownies "naked" until done and then top them with meringue: perfect!! So thank you so much for this suggestion!

Love that idea to add the meringue after the brownies were baked because mine were very underbaked, inedible.
Your meringue looks awesome! Love the wedge cut to the brownie, too.

Beautiful job on the brownies! Baking them "naked" was a great idea. I made a half recipe and think I might have forgotten to halve the orange. Oops.

They look very pretty. It sounds like you did the right thing by baking them first and then adding the meringue. I thought these would have white chocolate chunks in them - I think that would be good.

I think I'd like these with a really prominent orange flavor. It actually sounds more appealing, and probably cut the sweetness of the white chocolate really well.
