TWD: Blueberry Crumb Cake (and Marshmallows)


Mm mm, yum! I really enjoyed this week's Tuesday's with Dorie recipe, Blueberry Crumb Cake. Thanks so much to Sihan of Befuddlement for the great pick. Not only was it a winner in the taste department (the crumb topping was fantastic!), but it also gets credit for making my house smell wonderful for days after baking.

I halved the recipe and made it in a 6-inch round pan.


In retrospect, I wish I would have used a slightly larger pan as it ran over just a tad (this seems to be a recurring theme lately).

My only other change was to use egg yolks in place of the whole egg. I also made Dorie's marshmallows (still trying to catch up), so I had a shortage of whites and an excess of yolks. Not surprisingly, my cake looks a little extra yellow.

Here are my marshmallows. I made half plain and half with a swirl of raspberry sauce, although the swirl looks more like a schmear.


I don't know why, but I kept thinking the marshmallows would be similar to divinity (which I LOOOOVE). But they weren't really. They actually tasted a lot like... marshmallows! (Why was I surprised? I don't know.) They were good, but I prefer divinity. I guess I'm jaded as to what fluffy white homemade confections should taste like.

I'm sure these marshmallows would have been awesome dunked in a big mug of hot chocolate, though.

What a good way to use make 2 different recipes! I think the yolks probably made for a richer and yummier cake!

Man, I love blueberry crumb cake. It is such a deliciously decadent treat. That crumb is totally divine. I'm going to have to make this recipe ASAP. Your marshmallows look great, too...although, I'm with you: divinity is better!

Well done! the cake reallie looks awesome.. And yours ran over. I did mine in a 6 inch pan as well and halved the recipe. It worked out fine i guess.

Your cake looks terrific! I love it that you were able to use the extra yolks! I seem to always have leftover yolks or whites, depending on the week.

Your cake looks so great but the marshmallows really caught my attention. I really want to make them but I'm a little scared! I love the raspberry swirl, it's so pink & pretty.

Looks delicious! A nice, big 6-inch cake! Love your marshmallows too - I've never tried making them, but they don't look to hard. Plus they look mighty tasty! Well done on both efforts!

This is one of the best blueberry cakes I've ever seen. I made marshmallows at Christmas for gifts, some of them i dipped in chocolate and everybody loved them!

I kind of like it high and running a bit over the lip of the pan. The edges are probably the best part.

I bet the extra yolks made your crumb cake really nice and moist. Beautiful marshmallows too!
